Banana and Apple Oat Muffins-100th Post!!

After having made the  Banana Bread (eggless), I am posting this yet another egg free baked goodie as  my 100th post .  Needless to say all my baked goods are and will be eggless.  I choose to bookmark only those recipes wherein I will be able to skip the eggs.   I was not averse to eggs until about a few years back when I started trying eggless recipes.  My first ever attempt during my non blogging days to bake something eggless was the wonderful Banana Bread which has been posted here on my blog a few days ago and later on an eggless apple cake. Since then I have been hooked on to these eggless treats and encourage my kids also to try out baking in the kitchen without eggs.   Suddenly, when they get the urge to bake something, they just simply use my idea of milk and oil combination where the recipe calls for just one egg.  This ofcourse has been borrowed from here  which also lists out very many other ideas.  I find this easy to ad...

Eggless Banana Bread

An all time  favorite of the kids as well as adults.  This is a very simple recipe that I heard from my cousin.  Every time I make this bread I just blindly follow this and it is so simple and easy to remember. The recipe my cousin gave me calls for 3 big bananas for 2 cups of flour.  But the bananas I had were small in size and some portion had to be discarded.  Hence, I decided to halve the recipe and it turned out to be really good. 3 small bananas(I lost some and would have effectively used about two and a half or you can use one and a half big ripe bananas) 1/4 cup vegetable oil 1/2 cup whole wheat pastry flour 1/2 cup unbleached flour 1/2 cup brown sugar 1 tsp baking soda 1 tsp baking powder 1/4 cup of chopped walnuts pinch of salt Mash the bananas in a small bowl.  Add oil and the brown sugar and combine this thoroughly.  Mix all the dry ingredients in a bigger bowl.  Add the banana oil and sugar mixture to the flour a...

Eggles Dates and Walnut cookies

I came upon this simple recipe on the net, while I was just looking for some recipes with dates.  They turned out to be really wonderful and I could never tell that there were dates in them.  It is one good way to get the kids to eat dates which are known for its essential nutrient, mineral and vitamin contents.  I just felt I should have gone with my intuition of toasting the chopped walnuts before adding them.  That would have really brought out the nutty flavor in the cookies. 1.5 cups flour(combined all purpose and whole wheat pastry flour equally) 100 gms softened butter 1/2 cup sugar 1 egg(substituted with a tbsp of milk and 3 tbsp oil combined) 1 tsp baking powder 1 tsp cinnamon powder(i used 1/2 tsp) 1/2 cup tightly packed chopped dates 1/2 cup chopped walnuts 1/4 cup semi sweet chocolate chips(optional) pinch of salt Cream the butter and the sugar in a bowl.  Add the egg to it and beat it further.  In another bowl mix the flour, ...

  It has been quite some time since I contributed anything to my food blog that I made up my mind today to take time off from my navarathri preparations to post this from my inbox.  As you all know, my camera charger was missing and that brought to me a halt.  Around that time I made these muffins and while I was doing the Plum muffins I remembered about my daughter's camera with which I took the pictures. Bottle gourd is one of the earliest vegetables cultivated by man, believed to be originated in Africa. Not very familiar to the western world, it is one of the favorite vegetables in Indian Cuisine. Bottle gourd or Lauki has many beneficial properties that are valued in traditional healing. It is low in fat and cholesterol but high in fiber. It is excellent for light low calorie diets, as well as for small children, people with digestive problems and diabetics. The juice of a bottle gourd is an excellent remedy for acidity, indigestion and ulcers. I started including this in my diet only when I settled in Delhi for a while after my marriage. All I would do was make a rasdar with some onions and tomatoes. But after coming to the US, I learned that lot more was possible with this vegetable like the kheer, raita and teplas. Eggless Banana Oats and Nuts muffin

To me muffins are a versatile food in that it can be had for breakfast, as a snack or as a dessert.  I enjoy making them as much as my kids enjoy eating them.  I got hooked to this muffin recipe on  Zesty South Indian Kitchen as it has very less oil and used a combination of wheat flour and oats. Having tried this, I decided to send this to Priya's Bookmarked Recipes - Every Tuesday .  But I made a few changes like replacing the egg with milk and oil and some pecans instead of walnuts. Here is what I did: 1/2 cup wheat flour 1/4 cup all purpose flour 1/2 cup quick oats(powder it coarse) 2 ripe bananas 1/3 cup packed brown sugar 1/8 cup oil 1/4 cup milk(can use fat free) 1 tbsp milk plus 3 tbsp oil(instead of 1 egg) 1/4 tsp baking powder 1/4 tsp baking soda 1/4 tsp + 1/8 tsp cinnamon powder 1/8 tsp ginger powder 1/8 tsp clove powder 1/4 cup chopped pecans 1/4 tsp salt Pre heat the oven to 375 degrees.  Combine all the dry ingredients well...

Eggless Sweet Potato Muffins

I consider my blog to not only be a place to share my recipes with others but also to narrate my experiences.  Sometimes these experiences cannot be so good.  As far as baking is concerned, I like to try out simple cakes, quick breads and muffins.  Most of the time my attempts have been a success.  I like the idea of incorporating different kinds of vegetables as well in these recipes... even though typically bananas and apples are a favorite.  I bought these sweet potatoes(probably the second time in my life) with the intention of trying out some desserts.  The idea of using it in a muffin hit me I and looked for some recipes on the net.  I came upon this recipe here which called for 2 eggs for 2 cups of flour.  But I decided to substitute these eggs with banana and oil. As I started, there were a few hiccups - I was short of some potatoes and brown sugar.  Hence, I had to come up with alternatives....and ended up using the ingredients ...
